1 Tbsp. Vegetable Oil
½ Cup Chorizo Crumbles, Cooked
Garnish Leeks, Julienned & Fried
Cilantro Lime Crema
¼ Cup Sour Cream
2 Tbsp. Lime Juice
1 Tbsp. Cilantro, Chopped
To Taste Salt
To Taste Black Pepper
Directions
- In a small mixing bowl, mix together the sour cream, lime juice, cilantro, salt and black pepper for the cilantro lime crema.
- Season the U-10 Scallops with salt and black pepper.
- In a small saucepan on medium-high heat, sear the U-10 Scallops in the vegetable oil for about 1-2 minutes on each side.
- Plate the U-10 Scallops with the cilantro lime crema and chorizo crumbles, garnish with crispy leeks
